In Esperanto, to say "French" as in the language, one says "la franca". But if one wants to reference the people "the French", how would that translate?

But if one wants to reference the people "the French", how would that translate?franc- is the word root regarding the French, so you have franc·o “Frenchman”, franc·in·o “Frenchwoman”, franc·a “french”, la franc·a “French (language)”, Franc·uj·o “France” &c. So you're looking for franc·o·j (or possibly franc·a naci·o, depending on the context).
